How does a pilot control role and pitch on an airplane?

Answers:
Depending on the design of the aircraft, the pilot uses either a yoke or a joystick to move control surfaces. Pitch is controlled by the elevators at the tail of the airplane and roll is controlled by the ailerons on the wings.

Here's a Wikipedia page with some good illustrations of how things work.

Roll is controlled by the alierons and the pitch is controlled by the elevator.
JetDoc's answer is fine.
Just an added comment: The "YOKE" is similar to a car's steering wheel, with a much greater range of motion.
