If your name is just on the registration document then you are the registered keeper.
This doesnt mean you have to be the driver.
If you change names then yes the number of owners will change but this doesnt affect much at all.
It will affect the number of previous owners the car has had but do not worry to much about this you could just explain this to the new owner if you ever sell you car but i believe, but not 100% sure that if you do not change the details to make it correct you have not got valid insurance and if you have a crash you could be liable for prosecution, and if you drive the car make sure you are on the insurance too
Strictly speaking, the car ought to be registered in your name if it is yours.

log book details are for the registered keeper not the legal owner you should not have problems with insurance companies leaving it as it is, if you change details you will add a keeper to the log book.

In the UK the vehicle should be in the name of the User and keeper, plenty of major companies stick two fingers up to the law and use the company name or company secretary's name despite the fact the employee keeps the motor at home and no one else drives it, but they got clever lawyers and you aint so you can't get around the fact that main driver and user and keeper mean the same. There is nothing to stop you insuring the car if you own it but your mother is the user and keeper but it would seem silly insuring your mother as main driver.
dont forget the Log Book is no evidence of ownership, hell the HP companies own most cars at the end of the day.
So sort it ,put the car in mummys name and live with the fact you get 1 more owner on the logbook.

I suggest you submit the registration certificate to DVLA with a note saying you wish to change the name only, as when you bought it you accidentally provided your name by mistake.
You will have to re-regester the car in your mothers name, so the number of owners will be affected. It happened to me when i gave my old car to my girlfriend. Number of owners wont affect the value of the car when you come to sell it.
