An MOT is just about the mechanical safety of a car, plus emissions. If it is converted professionally then there is no reason it shouldn't pass if the rest of the car is OK. It'll probably be very expensive to have it changed, though, and as with most old cars - the two best days are the day you buy it and the day you finally get shot of it - they are money pits (unless you're a good mechanic!)
