Schipol is the lowest International Airport AMSL ?
Question being, where could you set your altimeter at it's lowest before heading off ?

Yes Schipol is the lowest International Airfield, however the lowest airstrip in the world is I Bar Yehuda in Israel (LLMZ) at an amazing -1266 feet or -386 meters. It is right beside the Dead Sea, the lowest point on Earth.
Schipol by comparison is a wimpy -11 feet, or -3 meters.

It isn't difficult to set your altimeter at an airport below sea level. I have done it at Death Valley, Cal. USA.
You don't set your altimeter. Your altimeter will always register a figure relevant to sea level. The airport issues a changeable pressure setting which allows the aircraft to measure the height above the airfield. Aviation experts are welcome to correct me but that is my best answer based on my experience
There are two settings for an altimeter:
QFE which is height above the runway and QNH which is altitude above mean sea level. If you are flying to a distant airfield with a view to landing, then ATC will pass on the QFE setting for your altimeter when you first check in.
A long flight may require the altimeter resetting several times as you pass over airspace boundaries, this setting usually being QNH.
