It seals the mating surfaces between two items. A common place for gaskets are in automobile engines. They can be found between the valve cover and the top of the cylinder head to keep the oil from leaking out. The gasket between the bottom of the cylinder head and the block helps with compression around the cylinders and also allows oil and coolant to flow between the head and block without mixing or leaking. There are also gaskets on the oil pan, the intake manifold, and exhaust manifolds.

The main function is to prevent leaks between to hard milled surfaces with inconsistencies, by fitting them with a soft malleable material (a gasket) that will fill the voids and compensate for those inconsistencies and still take the pressure.

Quite simply a gasket is placed between two metal cases and when these tighten together the gasket being made of cork squashes up and stops the oil from seeping out. The best example of this is the rocker box cover in a car which is the oblong bit on top of the engine for those that are not mechanically minded. Easy innit?

having said that suppose you only want a single gasket,,and dont want to buy the whole shooting match.
you used to be able to buy a sheet of gasket card (in variuos thicknesses(forgive the spelling) and cut your own out with a pair of cutters
