Good question will be interested in the answers as I can never remember. I always put shiny side down so as not to reflect the heat away.
Aluminium foil has been researched and it turns out that it could possibly cause altzeimers disease.

Silver side towards food though to reflect heat onto the food.
I don''t think it really matters but will add that it always seems to stick to lamb no matter which way it is used!

I always put the shiny side away from the meat i.e. meat on dull side then wrap it. It looks prettier and I think it spreads the heat more evenly.
