I have just bought a fiesta diesel of a dealer that was orignally from ireland but it still has its irish plat



Answers:
If it is on a Northern Irish number it is already registered in the UK, so its up to you if you change it to a mainland number or keep the original number. The DVLA will offer you the choice when you register it in your name.
If its on a Republic of Ireland number, you'll have to register it in the UK, so you'll get a new number.

Presumably you wish to get rid of the |Irish plate. No problem as long as you have the equivalent of the log book proving the year of manufacture. Ring the local DVLA office and tell them you wish too re register the car. They will send you the appropriate form (V?) and then that's it. Fill it in return it and they will send you all the new details you require.
