MK 3 Golf Stalling very regularly. Very delicate acclerator. Any revs and it stalls. Garage said nothing wrong

You often get circular unresolved situations with something which turns out to be basic.
Ask around if anyone knows a reliable 30/40 year old mechanic who works out of a small garage and has responsibility for his own show.
You may well find that within 5 minutes he turns up the idling screw or modern equivalent and you're sorted; then he'll wave and charge you nothing for PR value.
But seriously, these problems used to relate to idling, otherwise mixture/timing. A major dealership could have no idea, then the bloke up the street sorts it in a few minutes. Keep trying 2nd 3rd opinions.
Wish I knew more about modern ECUs, 'cos believe it or not I used to be Head of VW's field research on UK repair behaviour!
VW has always equaled extreme junk to me so I am sorry that I cannot help you.
Well, does it have issues of hard to start? Mean, taking a long time to get it to run? If so, then the first guess maybe a fuel filter is clogged, if not that, then it might possibly be a TPS sensore being picky. Doing sudden acceleration, causes it to malfunction. That'd be #2 guess. I'm leaning towards that one. Hope these help you out.
I had a similar problem. Phoned my local garage, and he said to accelerate hard and then lift off a few times in a low gear. This blew any dirt out of the fuel jets, and worked for me.
