Nothing its the plate weight ( VIN plate which has all relevant info for the vehicle its attached too) that is used. This is stipulated by the manufacturer. The only way is to modify your vehicle then have it re-inspected as a new vehicle and get a new plate load applied.

Sell it and buy one that does everything you want it for but is under the 3500 weight and double check the weights i know a transit is under this and the ford transit will run for ever. Have a look at one of these see if some might consider a swap with van and money deal for your vehicle

What can you do without? Remove second gas tank(if you have one),- and put in smaller "first tank" (Gas has weight when running over the scales).
Aluminum wheels weigh less than steel,- (can you live without a spare, jack, and tire tools?). Replace all the metal exterior parts possible with fibreglass ones if you can. Remove or downsize bumpers (if legal) to reduce weight. Can you find aluminum framed seats that are useable (use web straps and canvas, weigh less than upholstery!) Get rid of carpets and padding. 350 pounds is a lot, but you might be able to strip down enough stuff to get under the max limit!
