Didn't complete a sorn declaration. Pay the £80 fine or go to court?

Court costs aren't cheap and they won't go easy on you as you had plenty of notice that your tax was about to run out plus they gave you an additional 14 days to pay the reduced fine and I presume you didn't contact them and let them know you may have trouble paying in time.
The court could be rather unsympathetic, and take the view along with the DVLA, that if you haven't declared sorn, you may be liable for the road tax, and if you haven't paid that, it could fine you up to £4000 ( which i beleive is the current fine for failure to pay vehicle excise duty), and also add points to your licence.
I'd pay the £80 and leave it at that.
