Can you classify a hatchback as a sedan/salloon?

A sedan is the same as a saloon.
It is generally accepted that a sedan/saloon has 4 doors and a boot. The back of the boot is the back of the rear seats, and even if they fold down allowing access to the main cabin, if they are up then there is no access through.
A hatchback has either 3 or 5 doors. The odd door is the boot hatch which is generally larger than that of a saloon. Even with the rear seats upright, you can still gain access to the main cabin of the car.
A Coupe can be either of the above although they are mostly described as having 2 doors. The general definition of a Coupe is that it has sloping rear end. I have had a few Coupes and some have had a boot with no access to the cabin and others have been more hatchback like.

weather it has a hatchback or a trunk.
If i has an extended body it is a station wagon.
