If i hit car 1 which goes into car 2 who claims off of my insurance?

You would be legally at fault for all damage to both vehicles, and yes car 2 can make a claim on your insurance as well as car 1's.

In the 1st instance I believe you are responsible for car 1,
In the 2nd instance, if car 1 hits car 2 the driver of car 1 is responsible as they were to close to car 2 to avoid impact.

I was always told to leave a gap so I could see the road between me and the car in front when in a traffic queue so that my brakes should hold me if I get hit. This was because I would be liable if I hit the car in front, but that it depended upon how fast the person who hit me was going at the time of impact.

This is quite simple. The person who caused the accident bears the responsibility. Car 1 is in no way at fault as it has been shunted into the vehicle in front.

There are 2 ways this could be dealt with

1. car 1 and car 2 claim directly from your insurance
2. car 1 deals with car 2 claim (as no dispute car 1 hit car 2) and then claims both car 1 and car 2 claims back from you.
if it was on the road say at traffic lights and ended up as a shunt, or on a motorway pile up then the vehicle you hit would claim off you which is car 1, but if you hit a parked car and that hit another then both would claim off you .
