I would like to know where i can find a list of the insurance categorys that each car falls under?

Answers:
I think you mean a list of coverages that are available.

Bodily Injury (BI) pays for injuries you inflict on others.
Property Damage Liability (PD) pays to fix the other driver's car when its your fault.

Medical Payments (MP) or Personal Injury Protection (PIP..if you are in a no-fault state) pays your medical bills if you are in an accident

Collision - pays for your car to be fixed if you are at fault.

Comprehensive - pays for non collision claims like storm damage, fire, theft, burglary, etc.

UnderInsured/Uninsured Motorist Coverage (UI/UM) - pays you for medical payments if you are hit by an un or under insured driver.

Various others like Rental Car Reimbursement and Towing, etc.
Not quite sure what you mean, but if you mean what coverages you have on each car that you own, all of the coverages are listed on the Declaration Page of your auto insurance policy. You get a new one every time you renew your policy. This shows the types of coverage you have and what the dollar limits are for each one.
