Any one know what would cause a slight knocking through the steering wheel on my vectra when pulling away?

Yes this is a known fault on Vectras they were recalled for this it is more than likely the universal joint in the steering column.If you get someone to turn the steering from left to right and you listen it will sound like a slight clicking noise just above the floor pan.You can sometimes feel the clicking if you put your hand on the bottom of steering col.
Wheel bearings.
check for asylum seekers in the engine
if its only a slight noise I would check your wheel nuts first
track rod ends,maybe an engine mount
wheel bearings or ball joints,get it checked out urgently.
My focus did the same at times and I was told it was the wheel bearings. Never got to find out thoguh because I swapped it soon after!
Two possibilities.
CV Joints, as they are called in Australia. (Expensive, but cost you more in the long run if not replaced)
Your steering "Rack" has loosened over time (Cheap, only need a person to tighten it)
Wheel bearings(See other response), not really, they would make a squeeling sound all the time. But if it is the CV joints, get the bearings replaced at the same time, saving money on labour.
C V joint right or left need replacing
have you changed a tyre and removed the wheel brace
you should ckeck the suspention wishbone rubbers, if worn,,,replace. or. check the velocity joints
