What differences are there between tyres of different profile and size, with regards performance, economy etc?

profile and size of tyre should make no real difference to performance apart from fuel usage. wider tyres have a higher rolling resistance so use more fuel. the circumference of any Tyre and wheel fitted to a car should be the same as the original to work properly. many tyre web sites have calculators to help you work out what size and profile tyres you can fit to replace original wheels and tyres. For performance you should check the speed rating for any tyre (Z) is the highest as far as I know
There are many variables in choosing the best tire:

Check the proper size type for your make/model of car and consider how that car will be used. The book or many tire computer websites will recommend the proper tires for your vehicle. Then compare prices.
Wider and lower profile (shorter sidewall height) tires are geared towards performance as you have more rubber in contact with the pavement and less flexing of the sidewall.
