Will taking out the back seats of my car give me any a higher mpg?

Any weight reduction would result in your car using less gass mileage during acceleration. A more viable solution would be to drive a little smarter, though. Don't be heavy on the gas when starting, and keep your windows up on the highway. The drag causes raises your gas mileage more than the AC.
