Bishop Stortford is a bad place to start from - start from somewhere else.
I moved from Stortford some years ago, but you want to get across Hertfordshire to the MI, from which Alton Towers is signposted. We used to do it by going to Buntingford on the A120, then a couple of miles North up the A10 when you turn left onto the road through Cottered which gets you to Letchworth and the A507, which goes Westwards across past Hitchin and Luton to the MI.

The map search engines give you all sorts of weird answers because they stick to trunk routes, and there is as you will realise no main road West from Stortford to the M1. The route via Huntingdon you have been given is not too bad. Another search engine suggested going right down to the M25, which is silly!
