Im replacing my brake pads but only one wheel has pad sensor?
The new pads are identical to the old pads except for this difference,
What do I do with the spare sensor cable on the new pad?

Don't cut nothing off until you contact your local dealer for your car. It is possible that the other wiring has been cut off before and not replaced.
I wouldn't have thought that your car only has one wire, think of it this way, what happens if you have uneven wear on one side? If the pads have a wire on each side then there must be a wire clipped off, possibly the previous owner had a prob wity the light hence he cut it off, so don't cut nothing until you talk to your local dealer. I'd cilp it off as close to the pad as possible.
If your sure that they are identical you can cut the other wires off, in some garages they use pattern parts and a lot of these only have one set of wires on them, i have seen in the past where a vehicle has had sensor wires on both sides of the car yet only one set on the pads and the previous person ( i use the word technician carefully) had cut the other wires and then taped them up as when they fitted the patter pads he would have had an open circuit and a light on the dash, its not really dangerous but not brilliant practice i think, so as long as the dimensions are the same you should be ok
