I want a 35-36ft sailing boat, bilge keel with pilot house. What would you recommend?

Bilge keel?? most keels are down there .. unless you get a twin keel boat. They are more common in the UK and Northern Europe.
Do you mean a full keel as opposed to a fin keel?
As for a pilot house, some boats have helm stations only in the pilot house and nothing outside, so someone is always below or in the cabin unless you are on auto pilot. I prefer a helm outside unless the weather is soooo bad that you have to be in the cabin. But then, that's what your foulies and sailing canopy are for.
I would look for a dual station boat or a raised salon

.They are low maintenance, all fiberglass, galley, head and berths.

A pilot house would be a motor sailor vessel which is top heavy and has too much wind resistance. A Motor sailor is a fine vessel but only when over 50 feet.
