You pilot a ship and sail a sailboat, row a small rowing boat.

well it has an engine and a steering wheel i would say drive it
You can sail, steer, helm, drive, handle, or run a boat. I am sure there are even more. A pilot is usually a harbor or river navigator that takes over the handling of a vessel in treacherous or complicated waters.
These super tankers are uses pilots these days sailing is for the weekender although I suppose you could drive a speed boat.!
I would say you run it and take the Helm.

A pilot is taken on board when the vessel comes under port or waterway jurisdiction

I have never heard a helmsman say he is piloting a vessel, but thats what it is
The answer to all is pilot! No matter what it is, you have to use navigation and steering to get from point A to point B.That is piloting, no matter what yo want to call it.
