If this is the first car your restoring,start with something simple that parts are readily available for.
Something like an MG roadster would be good,they are mechanically simple,the drivetrain is easy to rebuild and virtually all parts are readily available.
A Jag of some description would also be an option but parts will be much more expensive,although still readily available.
Or go for something really obscure and spend the rest of your days searching autojumbles and never finish the bloody thing!!

If this is your first project, Triumph Spitfires are said to be easy to restore. Not much power, but they're not exactly sleep-enducing, are they?

I think that to save frustration, and premature insanity, you need to choose a car that you can be sure has a ready supply of parts to allow you to restore it. Nothing can be more infuriating than being at a certain stage in a restoration, and be stopped by the apparent non-availablity of spares, either new or used.
The MX5 is a neat little car to restore, and has an absolutely superb spares backup situation, as it has been accepted as a future classic by some of the third party spares manufacturers in the UK. I believe Rimmer Bros do an extensive catalogue of parts for all versions of the MX5 (Eunos, Miata etc.)
You could also do a Morris Minor but put a 1500 Sprite engine in it to give it a warm-up. You might even find a Shorrock Supercharger kit for it, and then it would burn some rubber.
being from Canada i can't help on the make / model stuff but in general avoid rust, positive earth electrical systems , and British wentworth fasteners, those 3 wheelers you have would be a blast, a cortina is a safe bet, there should be lots of Mg's, Spitfires,and the like, a rover with an aluminium 3.5 L would also be cool, learn electrical theory if you pick one with a Lucas electrical system , Good Luck !
A 2CV would be a good option. Maybe not fast but certainly stylish!

A good option nobody will mention is a Rover 3500 Vitesse. They are becoming rare and very expensive now, and were the original bubble-shaped cars. The 3500 V8 was the way to go, the other engines were rubbish but that one was great. Parts are still not too difficult to find and they are not particularly difficult to work on.
