what is the theme of the bar/restaurant? you can't ask us for ideas without giving us some idea of what kind of place it is. is it a place that older people frequent, young people, all people, do kids eat there? you don't want to offend any one. what kind of promos are we talking food, drinks, recreational, musical?
happy hour, ladies night, two for one, get wrist bands charge 20bucks a person for the band and then they get small drafts for 5 hrs( your price and time span of this promo should depend on draft cost for you and cost for the customer) Hawaiian night have a luau and have staff where grass skirts and sell tropicals all night. rent a kareoke dj and have a sing off or a dance off and provide a prize like free booze/dinner or money

Does the theme of your bar/restaurant have a bearing on the type and suitability of your promo night? i.e. if it is a more "upmarket" venue a fancy dress style night may not be appropriate! Is it an opening night or just a promo to attract more people?

Contact your drinks suppliers to see what they can offer. In the past they have been able to supply me with "mexican" style outfits such as hats/shooter belts etc (think tequila/mexican beer) if you're looking to have a more "fun" orientated night. Some of the major spirit companies are more than happy to provide free point of sale merchandise including outfits/t-shirts and all sorts of innovative stuff.. we managed to get an Ice Vodka Luge from a certain American Vodka company which absolutely "wowed" our customers. Its worth the price of the phone call to the marketing depts at the companies.

We have had "pimps and ho's" nights, beach party nights (including sand in the venue!), casino nights (organised with the help of professional "travelling casino" companies), 70's nights, "heaven and hell" nights - the list is endless. It really depends on what you're trying to achieve.

If you're looking to push restaurant sales make a showcase of the best food your chefs can cook by creating a one off menu for the evening. Get all the staff involved in promoting the night by handing out flyers in the local area (our staff didn't mind doing this for free - after all the more people in during your promo night, the more fun/tips they will earn!). We managed to get 1000 postcard sized flyers made up for around £130 ($200??).

How about a cocktail themed night if you want to do something a bit more upmarket - everyone loves a good cocktail. There are hundreds of receipes available on the internet - or just serve vodka martinis and champagne cocktails, keep it simple and sophisticated! Or go to the other extreme and have a one night only reduction on the price of bottled beer??!

Main thing for us was to get the staff involved as much as poss. When they were involved and having fun, the customer experience was so much better - after all, if the staff are having fun in your venue your customers should have no excuse!
