I don't want it to come back when the heath inspector makes his next visit. He was upset enough about the cockroaches he found last time

You need to report the fact that your restaurant had a rat! They do bite and could cause serious infections to children especially. Get your restaurant exterminated also and inspected again.! Sounds like you need to clean up your restaurant.
