store it in the fridge or it will mold quickly.

Good question --- I've been looking for some time now. Not sure where you are from but in Prince Edward Island, Canada there is a company called Duinkerken Foods Inc. They have a mix for bread, another for muffins and a third for pancake/waffles. Best I've tried so far.

U can't really get any that tastes like normal bread. My mum has coeliac disease and she does get her bread on prescription but it tastes even worse than the stuff u get in supermarkets. She also goes to health food shops and tries theirs but she has never found any that taste the same. I sometimes make her bread and cakes/biscuits with gluten free flour and she says that tastes nice. It's pretty impossible cos wheat is what gives bread that taste and maize flour is just not the same!
