savoury = garlic, zuccini, shredded cabbage, corn again, carrots, green onions, and chinese parsley (couriander leaves)
Well traditionally if you order Chicken Maryland in a restaurant you get pineapple and banana fritters.

ripe bananas, coconut slices, corn flour,white cumin/ thyme seeds/anis ,sugar and oil to fry.

But I am partial to a pineapple fritter from the chippy too.

Sweet fritters must have Banana and banana liqueur
it depends on what type of fritters you are making..u can practicaly make them out of anything (bananas,apples.etc.etc.. shrimp,eggplant etc)..U need flour, eggs, salt, sugar or honey, milk, water, spices/sesoning and then whatever you are making them out of.

I Make several kinds of savoury fritters with either flour or grated potatoes.
I found the very best and a MUST to add to savoury fritters is parsley as it really brings out the flavour. With the flour made fritters I add finely chopped parsley, carrots and springs onions- makes a really tasty side dish.
For sweet fritters I make a sugar syrup using rose water, and sprinkle this over the fritters. The fritters soak up the flavours. Real nice. Just one option.
So parsley for savoury and rose water for sweet.
Saltfish or Sardines. Sounds horrible but they are lovely. You chop a bit of onion into it as well.
Savoury: onions, prawns, corn,sliced parsnips, pork.
Sweet: apples, pears, bananas, pineapple, coconut, elderflower.

Syrup
2 cups pure maple syrup
1 cinnamon stick
1 vanilla bean, split lengthwise
Fritters
2 1/2 cups unbleached all purpose flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground allspice
1/2 teaspoon ground mace
1/2 teaspoon salt
2 cups vanilla-flavored soy yogurt
2 large eggs
4 teaspoons brandy
Canola oil (for frying)
Powdered sugar
For syrup:
Combine maple syrup and cinnamon stick in medium saucepan. Scrape in seeds from vanilla bean; add bean. Bring to boil. Reduce heat and simmer 5 minutes. Scrape down sides of pan. Let syrup cool completely.
For fritters:
Whisk first 7 ingredients in large bowl to blend. Whisk yogurt, eggs, and brandy in medium bowl to blend. Stir yogurt mixture into dry ingredients (batter will be very soft).
Pour oil into heavy large saucepan to depth of 1 1/2 inches. Attach deep-fry thermometer and heat oil to 350°F to 360°F. Line large rimmed baking sheet with several layers of paper towels. Frying 3 or 4 at a time, drop batter by heaping tablespoonfuls into oil and cook until deep golden brown, turning occasionally, about 5 minutes. Using slotted spoon, transfer fritters to paper towels to drain.
Sift powdered sugar over fritters. Spoon syrup into bowls. Arrange 3 fritters atop syrup in each.
Makes about 26.
