What to do with fresh beetroot?

i was given some fresh beetroot but dont no wat do with it, any ideas?

Ingredients
For the roasted beetroots
5 baby beetroots, washed
2 tbsp olive oil
5 garlic cloves
2 tbsp balsamic vinegar
For the beetroot tops
5 beetroot tops, sliced
1 tbsp butter
salt and freshly ground black pepper, to taste
1 garlic clove, crushed
85ml/3fl oz white wine
1 tbsp double cream
1 tbsp parsley, chopped
For the chive oil
3 tbsp chives, chopped
3 tbsp olive oil
1 chicken thigh, cooked, sliced, for garnish



Method
1. For the roasted beetroot, pre-heat the oven to 200C/400F/Gas 6.
2. Place the baby beetroots on a baking tray with the olive oil and the garlic cloves.
3. Place in the preheated oven for 10-12 minutes.
4. Remove from the oven, drizzle over the balsamic vinegar and return to the oven for a further five minutes, or until tender.
5. For the beetroot tops, heat the butter in a small frying pan, and as the butter begins to foam add the sliced beetroot tops.
6. Sweat for 3-4 minutes.
7. Season to taste, then add the crushed garlic and cook for a further minute.
8. Add the white wine, raise the heat to bring to the boil, then reduce to a high simmer, and cook for another 3-4 minutes.
9. Finish the dish off with the cream, stirring well, then add the chopped parsley, to serve.
10. For the chive oil, place the chives and the olive oil in a mini-blender and blend until smooth.
11. Serve the beetroot tops on a serving plate, with the roasted baby beetroots on top. Drizzle the chive oil around the plate and garnish with the sliced cooked chicken thigh.
If you have a microwave cook the scrubbed beetroot still in its skin and covered in water until it is soft - much depends on the size. Tennis ball size would take about 12 mins, full power.

If not microwave - boil in saucepan.

When cool peel skin off (its will rub off with fingers) and enjoy.
Throw it out, but that may just be me, I don't like anything that has anything to do with Beets.

you wont be able to do many performances
however your show will be better than 95 % of the stuff, on stage in the west end,
i would make pickled beets then put boiled eggs in the pickled beets and have pickled eggs..
when you have boiled it and skinned it, via a saucepan of boiling water, or via microwave.

Leave to cool. I personally like it sliced and with vinegar, its makes fabulous sandwiches!
Stain es everything it touches though, so be careful.

And yes it does colour your poos, so don't panic the next day lol!
boil it remove the skin and then eat as a veg with onions and a little garlic

boil until soft but whole , rub off the skins and serve with cheese sauce
Okay honey try this:- you have already been told how to cook & cool the beet, in prior answers so I won't go through that again.chop the beet into cubes, make your fav salad, i.e. Rocket, baby spinach cos lettuce, fresh toms, spring onions, anything you fancy, add the chopped beets and some cubes of feta cheese, toss in french dressing and eat with warm crusty bread. Gorgeous ! enjoy
wash it and boil it with skin on.
I like to boil them and just have it with butter and salt, but a good idea is to have it in a chucky Russian style soup/stew with chicken, leeks, potato, peppers, and carrots. put some sourcreme on top. Yum.
