Why does pitta take so long to cool down?

I just burnt the roof of my mouth wickedly on a toasted cheese pitta which I'd left for 2 minutes to cool down but was still nuclear

It was the oil in the cheese that held the heat and burned you. The pita kept the cheese bubbly hot. I recommend cooling off with cold beer.

It made your lips swell as well by the looks of it. They weren't originally a food but a way of keeping your hands warm in the winter. They can hold their heat all day
The air trapped inside stays hot, just put a small slit in the pitta to release it.
I know exactly what you mean there. Sometimes I have pitta bread and I heat it up in the toaster. I've burnt my fingers and mouth several times because its piping hot when I take the pitta out of the toaster.
The people that created them are evil! There in some secret hide away laughing because they know all you unsuspecting people will be burning yourself on there pittas!
because it's a puff bread- the inside heats up too. if you poke it- lots of hot air steam would come out.. bit like isulation cavities that keep the house warm. Ever tried making a pizza on pitta- to die for i tell you!

It's most probably something to do with the fact it would have loads of little air pockets to store the heat within the bread!?!
It doesn't, you're just impatient.
steam builds up inside, try and puncher it, so that the steam escapes.
