Cauliflower you get it white,purple and yellow are the last two natural or given dyes while grown or what?

I've when to a Farmers market yesterday and bought some purple Cauliflower when i boiled it up for lunch today the water had turned purple and the cauliflower looked alot less purple and alot more white. So is the purple cauliflower natural or is it given dye or something to make it change colour? Thanx.

No it is natural,I should know, I have grown it from seed! it always does that. try steaming it instead.
I believe that the purple is a natural variation of cauliflower, not a dye. The natural pigments would bleach out in cooking water, the same as a dye would.

And I do know that unless a cauliflower is "blanched" (turned white by having its leaves folded over the head as it's growing), the head will be yellow. Just read that in a cookbook about a week ago.
