My favourite is a Strawberry Shortcake!

It has Amaretto, canned or fresh strawberries and vanilla ice-cream all blended together, with cream on top!. For something a bit different a shot of Baileys added to it is also good.

Put 6 ice cubes in a 16 ounce mug, add 2 large jiggers of white rum, 1 large jigger of coconut rum, 1 large jigger of spiced rum. Top it off with Dole orange-pineapple juice.

cosmopolitan (add a splash of grand marnier)

Depends on your mood - if you want simple then a White Russian (sometimes known as a caucasion) is excellent:

Vodka
Kaluha
Cream (or Milk)
Ice

If you are feeling more sophisticated but still want simple then a Martini is the way to go:

Vodka (or Gin)
Dry Vermouth (Noilly Prat for preference)
Stir these ingredients in a jug with ice if you want it clear - if you shake the resulting drink will be cloudy - the choice is yours.
