Depends on where in Spain. In Valencia eat the world famous Valencian Paella. In La Mancha eat genuine Manchego cheese. In Andalusia try the gazpacho, if you are there in the summer. On the coast eat seafood. Pretty much anywhere in Spain you can get jamón serrano, which is a ham similar to prosciutto. Ask for serrano de bellota (acorn ham-that's all the pigs are fed) and the brand you want is Pata Negra. Full bodied Spanish red wines are maybe the best in the world. Rioja wine is more complex, Ribera del Duero is easier to drink without a lot of food.Spanish olives aare incredible. Also be sure to try marzapán, a sweet thick paste made from almonds. If you are in Spain and want to taste a variety of dishes and not spend an exorbitant amount try to find a good "tapas bar" where snacks ranging from simple to impressive are served with the drinks at a modest price. Don't base you impression of Spain, Spanish food, or Spanish people on any experience you might have in Madrid.

Tapas. In Seville, there is a Tapas Bar quarter around Calle Cano Y Cueto. They are generally eaten standing up and acts like a appetizer to fill you while having a drink before going for dinner.
Tortilla española is so good. The chorizo is also excellent. Jamon (ham) Serrano is another great option. We had chicken with figs that was also great. I dont think I tasted one thing I didnt like.
It depends which part of spain you visit. When I was in Barcelona, I ate mostly seafood like fresh fish, but skipped the Paella because I was going to Valencia.
I did do the Tapas crawl in Barcelona and loved all the various goodies, including the little fishies drowned in olive oil and garlic. They said it wasn't sardines, but perhaps anchovies? I thought it would taste like fish bait but you know, it was very good.. enough for me to eat it again, finishing it off with some great sangria! YUM!
In Madrid we did try paella, and found one great place called La Barracca. But in Madrid we loved eating the Jamon, the cured ham. They had tons of places including a chain of restaurants called the Museum of Ham. and you can order all sorts of ham!
So to answer your question, when in Spain, eat what the locals eat. For example: Paella is a typical Spanish dish, but its not good in all parts of Spain.
Oh, I seem to recall that Spain loves their potatoes. or at least in the Barcelona and Madrid area. I ate a lot of fried potatoes with every meal.. delicious but so full of carbs!! Laugh!!
If the place is full of people when you show up at 10 pm, thats a good sign its a good place. Or, if they ask if you have a reservation (and the place is jamming!) that's also a place to take note!

PS: One drink I still crave is the Cafe con Leche. Its just espresso with milk, but I cannot find the precise "taste" back home in the US. Don't know what they do differently, but the Cafe Con Leche is still my favorite memory!!

Among the tapas, which you MUST try, my favourite is called Patatas Bravas.
It's the local "chips" plus 2 sauces, one spicy, one creamy. The jamon (smoked ham) and the cheeses are good too. In some places, you can see the ham hanging in the restaurant. Nothing gruesome as it is cured ham.
If you have a sweet tooth, on an afternoon break, try also the "Chocolate con churros" : a cup of hot thick chocolate (still drinkable of course) and their local pastry (a bit like donuts, but in the shape of a long beignet, rolled in sugar). High in calories, but sooooooo good !
As for France, each county has its own specialities, so don't be scared to try a few local dishes !
