I am looking for a recipe for a "scottish plain loaf"?

Time to make 3½ hours 30 min prep


2 tablespoons yeast
1 tablespoon sugar
1 cup water
1 cup oil
4 cups lukewarm water
1/4 cup sugar
1 1/2 teaspoons vinegar
2 tablespoons salt (level)
14-15 cups flour



1. Dissolve 2 tablespoons yeast and 1 tablespoon sugar in 1 cup water.
2. Let stand until yeast rises to the top.
3. Sift the flour.
4. Dissolve 1/4 cup sugar and 2 tablespoons salt in 4 cups lukewarm water.
5. Add vinegar and oil.
6. Add to flour.
7. Add yeast mixture and mix well.
8. Kneed dough until smooth.
9. Let rise for 45 minutes in warm oven.
10. Punch down and let rise for 30 minutes.
11. Punch down and form bun/loaf.
12. Let rise for 2 hours.
13. Bake at 400 for 10 to 12 minutes.
14. Bread may be stored in the freezer until ready to use**.
