I have a couple of favourites.
1. Grill 3-4 chicken mini fillets sprinkled with olive oil and a little soy sauce. arrange salad leaves and lettuce cucumber etc. on plate. sprinkle over a handful of seeds (pumpkin, sunflower etc) then drizzle a dressing of balsamic vinegar and olive oil. Finely grate some of your favourite cheese. Place chicken on salad then top with the cheese and black pepper. the hot chicken meets the cheese and they fall in love. Yummy!
2. Mix tuna with mayonnaise and sweetcorn if you like it. Serve with cooked pasta or a jacket potato. If you're very hungry, add a hard boiled egg. Add salad ingredients, more mayo, and of course, cheese. I also add olives because I like them, and we often add baby beetroot in sweet vinegar.
Both salads lovely with warm crusty bread and butter, with cold beer or wine. :)

Cut up fresh broccoli and califlower. Cup up a can of ripe olives. Merinate all of this in Italian dressing. It is very good and can be used on top of fresh greens with a little parmesan.
Also use fresh spinach, dried cranberries, pineapple, almonds, mandarian oranges, sunflower seeds. You can top with a sweet sour cream or cream cheese dressing or use a raspberry walnut

u want original here goes.very unhealthy i am sure but ohhh so good..first warm taco shells break up on plate.add seasoned meat and cheese melt in microwave ..then garnish with lettuce tomatoes black olives salsa and top off with ranch dressing .stir it well.as an option if u like add a few jalapenos.yum.yum..(tums optinal).;-)

8 c spinach leaves; torn, but if you use baby spinach leave the spinach whole, if you get the spinach in a bag it's one bag.
1/2 c macadamia nuts; toasted
1 1/2 c raspberries; fresh
DRESSING
3 tb raspberry vinegar
3 tb raspberry jam; seedless
1/2 c salad oil
2 tb sugar
Toast macadamia nuts in 250 degree (F) oven for 30 minutes, flipping and stirring often, but keep your eye on them. Cool. Mix, spinach, nuts and rasberries in a large bowl. For Dressing: combine all ingredients in a blender and blend 'til thick. Pour dressing over salald and enjoy. Oh, and this also is good with Feta cheese crumbled on top. my favourite salad is rocket leaves and watercress , home made chunky croutons (sprinkle bread squares with olive oil and herbs then bake) with feta cheese cubes (not fattening) baby tomatoes and olives , with a lovely balsamic vinegar dressing..mmmmmmmmm..a. is nice in it as well , or grilled parma ham chopped up or bacon , yum!

okay first u need to grill :
eggplants
zuchinni
squash
onions
bell peppers
mushrooms
asperagus
(toss all veggies in olive oil salt pepper and other herbs..ie basil or oregano (i prefer oregano) )
and any other vegetable that u like and that can bee grilled
once they are grilled and cooled toss them with balsamic vinager and olive oil and a little salt and pepper to taste wow wieee
mine goes like this.lettuce,cucumber,carrot,o. boiled egg sliced,grated cheese or parmasian cheese and sliced up chicken fillet(optional of course) and thousand iland dressing. oh and maybe some crutons,the ones from sainsbury
Try a greek pasta salad. It's really light, and very good. You just make a basic greek salad dressing of olive oil, vinegar, garlic cloves, italian spices and diced tomatoes. Let it marinade for a few hours, but remember to remove the carlic cloves before you sere it. Then boil up some fuscilli, that spiralled pasta. I find the tri-coloured pasta looks really good, although taste wise, it's all the same. Then pour the dressing over the pasta, and let it chill in the fridge for a few hours. Load it up with feta cheese just before you're ready to serve. Yum! It's probably got about 1000 calories from the oil and the pasta, but it's really good. Especially in the summer.
Okay, here is my fave. Take a can of good tuna. Open and drain. Put 1/2 can in a bowl and save other 1/2 for later. (trust me you will want more.) Chop up 1/2 an avocado, salt, pepper the avocado and saturate the avocado with lime juice. Next chop up one juicy tomato. Salt the tomato. Add tomato and avocado to tuna. Chop up some cilantro and put into tuna mixture. Finally, add about 2 tablespoons or more of Santa Barbara Habenerra Lime Salsa to the tuna mixture. Get a fork and enjoy!!
Diced apples add just a touch of sweetness and lots of crunch. When I make a salad I use diced ham, chicken, greens, tomatoes, diced apples, and a light dressing
My favorite salad!!
1 bag of green (usually Spring Mix/Spinach if safe!)
slice 1 small pear (or you can use an apple)
1 can of mandarin oranges, drained
about 10 strawberries, rinsed and sliced
chopped dried apricots
1 handful of Craisins (dried Cranberries)
1 handful of sliced almonds (or chopped walnuts)
Crumbled Bleu cheese (Or gorgonzola)
The dressing that I like to use is Creamy Poppyseed, but you could also use a sweet italian or Rasberry Vinegrette. (I guess you could actually use whatever you want, but these are the ones we use in my house!)

Baby leafs, swiss chard, lambs lettuce, pommerinio tomatoes wild rocket spring onions grated parmasan cheese..dress it with a blend of olive oil, balsamic viniger and whole grain mustard. I've been doing this for about 5 years and I'm still not bored of it.
CUCUMBER SALAD
3-4 cucumbers, sliced
2 tomatoes, cut into 8th's
1/4 cup crumbled feta cheese
1/3 cup garlic crutons (optional)
2 tbsp. walnuts (optional)
1 1/4 cups Red Wine Vinaigrette or Vinaigrette of your choice
In bowl, combine all ingredients, toss with vinaigrette and chill before serving
over a bed of romaine lettuce.
I made one last night. Romain lettuce, grape tomatoes cut in half, sliced red onion, grated carrot, sliced radishes, crushed cashews, one or 2 tablespoons of minced garlic from a jar. And 2-4 tablespoons of roasted seseme seed oil. Mix and searve eat as is or add your favourate dressing, lemmon juice or vinegar.
I guess you could add other veggies aswell or use a different lettuce for a base, just not iceburg or anything to strong that will kill the taste of the rest of the ingredients.
How about my Cajun Cobb?
On a platter I spread out good spring greens. Then I start to make rows of my favorite things. I usually have 2 rows of each ingredient.
chicken breast that I have cooked on my griddle or George Foreman grill that is seasoned with plenty of good cajun seasoning, and diced up once it has been cooked. I let cool a bit so juices don't escape.
tomato diced up,
avocado diced up.
Good sharp cheddar grated
red onion diced
For my croutons I butter both sides of a couple slices of texas toast and sprinkle each side with cajun seasoning. I also crisp them on the griddle or grill and I cut into cubes and put around outside of platter.
For my dressing I drizzle a good poppyseed. This is also great with Ranch. I only use the Hidden Valley that I make myself with buttermilk and mayo.

how about three bean pasta salad?
cook some pasta and in a separate pan cook some frozen peas. while they're cooking cut up spring onions and cherry tomatoes and drain; rinse a can of butter beans, a can of red kidney beans and a can of sweetcorn. Also open a can of baked beans but don't drain or rinse.
once the pasta is cooked rinse it first with boiled water from the kettle then with cold water. drain the peas and allow both to cool.
finally add all the ingredients to a large bowl and mix with a tablespoon of mayonaise. chill and serve.
also BBQ roasted vegetable rice salad.
chop peppers, onion and mushrooms into large chunks. add to a large oven proof dish with some whole cherry tomatoes (and some chunks of pineapple if you like) and coat in BBQ sauce. mix and put in the oven on gas4/180 for about an hour.
chop up spring onions and keep to one side along with a drained can of sweetcorn.
meanwhile cook three packs of microwave garlic and corriander rice as per instructions. empty into a bowl and allow to cool.
once the veggies are cooked allow to cool then add all the ingredients together and mix. chill and serve.
both delicious and my own creations that go down really well at bbq's!
Well the French reckon salads are better for having less ingredients (and should be eaten as a kind of light starter before your main meal).
Try grating or finely shredding some fresh carrots into a bowl, seasoning with salt and pepper and squeezing over lemon juice to taste. Toss together and serve. Healthy and delicious!
