Got four friends coming around for Sunday lunch, after easy to prepare recipes, ideally the night before?

Lacking inspiration beyond the usual ideas of a roast, lasagne, shepherd's pie etc etc Any help please?

curry is lovely for sunday lunch, and it actually tastes better if u prepare it the nite before especially if its lamb or beef - the spices have a longer time to infuse. you can also prepare the basmati rice the nite before and steam it in the morning. get pre packed naan as well and just pop em in the mocrowave 2 mins before you serve and make a huge bowl of green salad as a centrepiece (make the night before and add dressing just before serving).
for starters just buy some frozen spring rolls or mini pizzas and bake/ fry em before hand and serve with loads of dipping sauces.
and for desert you can always serve good old fashioned vanilla ice cream with choc sauce and mugs of coffee..

How about a chilli or something like a Thai curry? Very easy, sociable food.
How about a nice warming chowder? Just cook it up and serve it on the table in it's pot, bake some nice tear and share bread to go with it.

If you wanted a nice warming starter as well, you could always buy some camembert (buy one of the ones in the wooden packaging), heat it in the oven until its hot and runny, then all your friends can tear off some bread and dip it in the cheese.

A nice curry, you can make it the night before and all you have to cook on the day is the rice, plus you could make a few dips the day before as well and have nan bread and poppadoms.

I know you say that a roast is a "usual" idea but if you make it interesting it can be easy to prepare and still exciting. Try a leg of lamb and make slits in it and stuff slices of garlic and sprigs of rosemary into the slits before cooking. For an alternative vegetable, slice up a butternut squash and rub on oil, crushed red chilli, pepper, salt, crushed coriander seeds and bake for 30 minutes. All the prep can be done the night before and you just have to shove it in the oven. For dessert you can make a cheesecake and put it in the fridge the night before.
How about brunch? That way you can make it all the night before. We have over-night french toast, quiches and souffles, cheesy potatoes, sausage, etc. They are all pretty easy and there are lots of recipes for them. Heres a site to get you started, they have some excellent recipes.

Marinate the meat (or fish or poultry) the night before and the next day all u have to do is cook with your friends (not too much work for you too.LOL)!
Something like a taco bar with warmed meat mixture in a crock pot, shredded lettuce, tomatoes, onions, melted spice cheese, olives, tortilla's or chips or zip lock omelets. Have to use Zip lock freezer bags or it won't work. Have either diced ham, chicken, sausage, shrimp, shredded cheese, diced green onion, mushrooms, tomatoes or anything you want. Crack 8 eggs into a container with a spout. First, give everyone a zip lock bag to make their omelet. Then pour 2 eggs into the bag, add other ingredients into the bag. Mush the eggs and stuff with the fingers. Make sure all the air is out of the bag before sealing. Put their name on the bag with tape and marker. In a pot of rapid boiling water, drop the bags into the water for 13 minutes. Depending how much ingredients are put in, you can allow up to 16. Take out the bag and open and slide the omelet on a plate. I wouldn't have believed this either until I not only saw it done, I also did it for my neighbor. It really works and is fun will the group. Fruit is a great garnish too to go along with the omelets

I make a homemade Chicken Pot Pie. Simply buy a frozen pie crust (two in the package), a can of cream of chicken, a can of chicken, and a can of mixed vegetables. Preheat your oven for the setting for the pie crust. Mix the cream of chicken, the drained chicken and the drained mixed vegetables in a bowl. Pour the ingredients into one pie crust. Top with the other crust poke some holes in it and bake it until the crust is brown and done. It's simple, quick, and easy! My family loves it!
