Medlar Jelly
1lb medlars
1/4pint water
sugar
juice 1/2lemon
simmer fruit and water until soft.Strain through a jelly bag.
Measurejuice,allow 1lb sugar to 1pint juice.Stir in sugarand lemon juice.Boil rapidly until set.
With such a small quantity you won't waste much if you don't like it

Grated rind and juice of 2 lemons
1/3 pint water
Simmer fruit, water and lemon rind until soft
Strain through jelly bag
Allow 1lb Sugar to each pint juice.
Stir together over a low heat until sugar is dissolved
Boil rapidly until set.
Pour into sterilized jars and seal.

2 ½ lbs Sugar
¾ pint Water
1 Lemon
1. Use only fully ripe fruit.
2. Remove pips and do not peel.
3. Cut up and crush.
4. Add ¾ pint water and juice of 1 lemon.
5. Bring to the boil, cover, and simmer for 15 minutes.
6. Place fruit in a jelly bag or cloth and squeeze out the juice.
7. Measure 1 ½ pints of juice and the sugar into a large saucepan and mix well.
8. Bring to the boil and at once add the Certo, stirring constantly.
9. Bring to a full rolling boil and boil hard for 1 minute.
10. Remove from the heat and skim.
11. Pour quickly and cover in the usual way.
