How do i make ratatouille?

1/2 c. oil
5 garlic cloves, finely chopped
1 1/2 c. onion, chopped
1 1/2 c. green or red peppers, coarsely chopped
1 1/2 c. diced eggplant, skin on
1 1/2 c. zucchini, sliced and quartered
1 tsp. fresh black pepper
1 tsp. salt
2 to 3 tbsp. chopped fresh basil
Cayenne pepper or Tabasco
1 1/2 c. chopped ripe tomatoes (may use Italian plum)

In heavy skillet, saute in oil the garlic, add onions and blend. Add chopped peppers, eggplant (does not need to be soaked or salted before) and zucchini. Blend all together well, mixing with a wooden spatula and shaking the pan. Then add black pepper, salt and basil. Add cayenne or Tabasco if desired. Cook 10 minutes over brisk heat, stirring constantly. Then add chopped tomatoes. Let the ratatouille cook down to the consistency you like.
First, start with a nice plump rat.

Ingredients
olive oil
½ red pepper, de-seeded and diced
½ onion, peeled and diced
3-4 baby courgettes, diced
1 tsp tomato purée
salt and freshly ground black pepper
handful of parsley, chopped

Method
1. Heat the oil in a frying pan and cook the pepper and onion until soft.
2. Add the baby courgettes and tomato purée, and cook for another minute. Season with salt and pepper.
3. Stir through the chopped parsley and serve.
Tomatoes, bell peppers, eggplant, zucchini, and onions. Dice all the vegetables and sautee in olive oil.
Ratatouille:

2 teaspoons finely minced garlic
1 cup chopped onions
1 large eggplant
3 medium zucchini
2 large green peppers
1 teaspoon dried oregano
1 tablespoon fresh basil or 2 teaspoons dried basil
2 teaspoons chopped parsley
2 cups crushed canned tomatoes
fresh ground pepper

Cut vegetables into 1-inch pieces.

Heat oil in a large saucepan, cook garlic and onions until tender.

Add the eggplant,zucchini,pepper,orega. and parsley and stir well.

Saute about 5 minutes.

Add tomatoes,cover and cook over low heat for about 45 minutes.

Makes about 4 servings

This isn't the traditional way, but is much, much easier.
Chop all the veg you are using into chunks. I use courgette, aubergine, red onion, a punnet of on the vine cherry tomatoes(leave these whole). Put a tablespoon of olive oil and a crushed garlic clove in a roasting tin, then ad the veg and stir round to coat in the oil/garlic mixture. Season with salt and freshly ground pepper. Roast in a 180 degree oven for about 40 minutes.
