Lentil, beans and Veg casserole topped with pasta (assuming you have pasta) and a cheese sauce - I am coming to yours for tea. I have nothing in.
or a big stew- have you got any meat? chuck everything into a big pot add a litre of stock and let it bubble away for an hour or so- lovely!
ps season to taste
Sounds like you have the makings for a wrap. chop all the veggies up small, make a light dressing from the herbs and oil, drizzle it on, and wrap it in a large lettuce leaf, pita, or tortilla.

I'd use the lentils and onions to make a good pot of lentil soup and have either a salad or one of the green veggies as a side. If you have some corn meal, make some cornbread to go along with the lentil soup.
probably a veggie stir fry, and a salad too. It's healthy.
Have to take a rain check for dinner tonight, invite me again when youv'e been shopping. lol
Sounds like you can make a nice veggie salad!
Baked cauliflower in a cheese onion sauce? You could some oregano and garlic if you like.

Ummm kidney beans, onions, bell peppers (do you have those?), salad leaves with a tangy vinaiggerate dressing?

Hope this inspires you:)

you could make an indian curry using the cauliflower and onions and adding spices of your choice-garlic,ginger,etc
with the lentils you could make an indian soup.

Hummus and lentil soup and a nice salad on the side.
Sautee chopped onions and garlic very, very slowly until lightly browned and soft. Add 1/2 cup of lentils and 1/4 tsp dried thyme, salt and pepper. Add water to cover, cover the pan, and simmer until the lentils are tender, about 1/2 hour.

Serve with brown rice and a tossed salad.

Invite me over.
You can try making like a bean salad to put over your greens or make a casserole with the beans and maybe use a cream soup or broth with maybe some rice.
Steam the lentils and beans in water first, so they are not stringy or hard. Then put the oil in a stir-fry or frying pan and heat. Add the lentils, vegetables, cauliflower and stir fry. Make or use a good vinagrette and pour over it just before you are finished. It's great. Almost like a shish-kebab.
A Daal Curry or Veg Curry with either Naan Bread, Chapati or simple boiled Basmati Rice. Add some coconut cream if you have it. Or for add a few fresh chillies to have a hot'n'spicy korma. Hope you get the meal you want LOL
On the back of the lentils are there any instructions?? Sometimes they have instructions on the back with suggestions on what to make I don't know for sure. It also depends your altituted and attitude. So. well dont starve in the meantime, we have plenty of rice at my house your welcome to come and share some with us.
if you have a blender this will work what you can do is sautee or roast some peppers and onions in light oil then if your prepare your beans one kind or even all of them in a pot with some spices whatver your like when your oinions and peppers are done and the beans place them in a blender with the peppers and onions and thrown in some green veggies add a little oil and water and keep in mind this probably won't have much flavor just tatse as you go and season to your liking and then pop it all uin a blender and your will have the best home made soup you have ever tasted and toast some garlic bread your good to go
What about a cheese, tomato and onion omelette with salad?
Soak a cup of lentil for at least 3 hours.
Dice one medium onion.
Spice to taste. I like curry powder.
Turn it into a paste using a blender. Additional water may be necessary.
Deep fry in oil.
You could always add grated cheese to the mix.
I don't know when your dinner time is, so I don't know if you have enough time to soak your lentils.
So how about making a vegetable chile.
Take your green veggies and onion and saute them in olive oil. Add 1 cup of chicken broth. 1 can of tomatoes that have been put through the food processor. Add some basil, 2 T of chile powder, 3 cloves of garlic, peeled and mashed or minced garlic, 1 T ground cumin, 1 T oregano. 2 cups of black beans or kidney beans.
You can add in some corn if you have it. Simmer 1/2 hour and add cheese if you like. You can also add sour cream to it after its done.
Good luck!
