What should I have for dinner tonight?

Im a lousy cook. Need some good ideas for a big tastey meal.

Beef Enchiladas

Prep: 20 minutes
Cook: 25 minutes
Servings: Serves 4
1 pound lean ground beef
or - 1 package fully cooked shredded beef
1/2 cup chopped onion
2 cloves garlic, crushed
1/2 tsp. salt
1/4 tsp. pepper
2 cans (10 ounces each) mild enchilada sauce
8 small corn tortillas (6-7 inches diameter)
3/4 cup shredded pepper-jack cheese
1 Tbsp. chopped fresh cilantro
-- sour cream (optional)




Preheat oven to 350°F.
In a large nonstick skillet, brown ground beef, onion and garlic over medium heat 8-10 minutes or until beef is no longer pink, breaking beef up into 1/2-inch crumbles. Pour off drippings. Season with salt and pepper. Stir in 1/2-cup enchilada sauce from one can. Set aside remaining sauce from that can.
If using fully cooked shredded beef, stir in 1/2 cup enchilada sauce and follow recipe below.
Pour second can of sauce into a shallow dish. Dip tortillas, one at a time, into sauce to coat both sides. Spoon one-eighth of beef mixture evenly down the center of each tortilla and roll up. Place seam-side down in a 13x9-inch baking dish.
Cover dish with aluminum foil. Bake in 350°F oven for 15 minutes.
Remove foil. Spoon reserved enchilada sauce over enchiladas. Sprinkle with the cheese. Continue baking uncovered for 10 minutes or until cheese is melted. Sprinkle with cilantro. Serve with sour cream if desired.

I'm going to have McDonalds for dinner - I go once a week, each week on Monday night. It is a true "comfort" to do this. Go there too!!
Go to Tesco or ASDA. They have Chinese and Indian meal packs that are quite good and easy. Bon appetit!

Practice makes perfect.. Try roasting a chicken. You don't need much expertise to do that. Just make sure you have it thoroughly cooked. Throw in some potatoes to bake along side. Get you some frozen vegetable mix.and VOILA..you have a good tasty meal.

My sons favorite is Hamburger Helper. Easy to fix, lots of different types, heat up a can of veggies with it and you have a nice meal.
pasta and cottage cheese
Pasta with prawns. Boil pan of water and add pasta of your choice for the time stated on the packet. In the meantime, saute 2 cloves of garlic and 1 red chilli in 2 tablespoons of olive oil. Add prawns and saute for another minute. Add one glass of white wine, two tablespoons of tomato puree and two tablespoons of sun dried tomato paste. Stir and simmer for 5 minutes. Drain pasta and add to mixture. Then serve! Yummy

How about vegetable and bacon rice? It's a recipe sitting in front of me, waiting to go into a cookbook.
Cook 200g long-grain rice according to the packet instructions. Add 100g frozen peas 2 minutes before you finish cooking the rice. Drain well and set aside.
Cut 5 spring onions into 2 inch pieces and then into the length into very thin strips. Immerce in iced water and leave for 5 - 10 minutes. They will curl.
Head oil in a frying pan. Add 175 g chopped bacon, 1 chopped and deseeded re pepper and 2 cloves of sliced garlic. Stirfry for 3 minutes over a medium heat. Pour in 2 large well beaten eggs and stirfry until just set. Add rice and peas. Stir in 1 teaspoon of Chinese five spide powder or dried chilli flakes. Heat through. Drain spring onions and mix in. Season and serve.

Im a terrible cook too! One of the things i do attempt now and then is spag bol, and you can do it in the microwave! Fry off some mince , add onions, garlic, tomato puree, maybe even tinned tomatoes, mushrooms cook till nicely browned, boil some pasta in sligtly salted wateruntill tender.
