Has anyone got an easy receipy for bombay potatoes?

It's not quite Bombay pots but my variation is just as good I promise ! Just take 10 new pots slice them in half put into baking tray add 1 lrg onion sliced, 2 red chilli's chopped, 1/2 a cauliflower in florets, tomatoes but not the juice from a tin. Then sprinkle a tsp cumin, 1tsp coriander, 1tsp turmeric' 1/2tsp cayenne and 1/2 dried crushed chilli. Then drizzle 3tbsp of oil over the top cover with foil and cook gas 5 for 1 hour after the hour season with salt and pepper and cook for 1/2 hour same temp should be gorgeous never have complaints at my house.

1 teaspoon mustard seeds
1 pinch ground cumin
1 teaspoon turmeric

6 potatoes, peeled, parboiled and cut into smallish cubes

These simple spiced potatoes are one of the most popular Indian side dishes. Serve as part of any Indian meal, although they are particularly good with chicken or vegetable curries.
Ingredients
4 tbsp oil
¼ tsp mustard seeds
2 pinches of chilli powder
¼ tsp turmeric powder
350g/12oz potatoes, boiled and quartered
salt to taste
Method
1. Heat the oil in a pan on a medium heat setting.
2. To check that the oil is hot enough, sprinkle in a few mustard seeds, if they pop the oil is ready. Then add the remainder of the mustard seeds.
3. Add the chilli and turmeric powders to the sizzling seeds, and salt to taste.
4. Fry this pungent mixture of oil and spices for 1 minute then add the potatoes. Fry for about 4 minutes until the potatoes are smothered in seeds and appear to have crispy edges. They will look quite yellow in colour. Cover the pan and on a low heat, cook the potatoes for a further 5 minutes.
5. Serve immediately.

4 good waxy potatoes in 1 inch cubes. cook them half way.
4tbls ghee
2 diced onions
2 sliced red chillis
2 large fingers of fresh ginger
2 cloves garlic
in a pestle and mortar:
1/2 tsp coriander seeds
1/2 tsp cumin seeds
1/2 tsp mustard seeds
1/2 tsp tumeric
1/2 garum masala
salt and pepper to taste.
boil potatoes until half cooked.
put all garlic ginger and chillies into medium
hot pan with ghee.
add spices and potatoes and turn heat down low
season to taste
dont burn it!
if you want you can add a couple spoons of yoghurt and fresh coriander leaves or baby spinach.
