Can you grow a damson tree from a damson stone?
Or are they one of those trees that need grafting, like apples? And any tips for success, such as do I stratify the stones?

sure you can. It'll need to be fertile and not a GM hybrid. . often this depends on which other fruit trees are around it and the exact variety you have. EG some Damsons need trees are thier same verity to produce fertile fruit, other can be OK from Cherry, Apple or Plums.
Graft will work but you'll need a decent hardy root stock.
What have you got to loose by planting up all those stones ?
P.S. Apples don't need grafting either, again it depends on the variety and location
Gert the stone plus another one
place them in a condom with some fertilizer
after about 8 and a half months you should see some shoots growing
take them out and plant in a sonny position
