depending on the butcher a haggis can be made from pigs, sheep, cows or dear offal. offal being heart, lungs and liver these are cut up and boiled until they break down into smaller parts and then mixed with oatmeal and spices they are then stuffed into the stomach or into an artificial skin ( this being the most common now) and boiled again until cooked but still get sold as an uncooked meat in the shops. cows haggis is better tasting because of stronger tasting liver. trust me on this i work in an abotoir

Haggis is basically sheep offal ( intestines etc) which are chopped, mixed with barley and spices. Historically it was put into a sheeps stomach lining and then slowly boiled, but these days they use synthetic pouches to stuff the mixture in.

It is served with mashed potatoes and mashed turnip ( called neeps and tatties) and it is delicious.!
