One way would be to take Ni(OH)2 and vinegar, which contains Acetic Acid, and combine them in a 1:2 molar ratio.
The reaction would be:
Ni(OH)2 + 2CH3COOH --> Ni(COOCH3)2 + 2H2O
You could also combine excess solid nickel carbonate NiCO3 with vinegar (acetic acid).
Keep adding nickel carbonate until fizzing stops (it liberates CO2 gas). Filter off the excess solid. Then evaporate the water.
