most of it is actually from swallowing small amounts of air with our food / liquids. Sometimes it's from fermentation in our intestines caused by indigestion, and other foods which tend to contain bacteria which are known to give off methane and hydrogen as a by-product of their metabolism.

Gasses are built up as a bi product of digestion - as the digested food is moved trough the bowls, the goodness is taken out leaving only a waste product. This degrades further as bacteria takes it toll on the waste - the result is gas being expunged from the intestines ahead of the waste product

The noise is the flapping of your sphincter like when you blow a raspberry, due to the escape of the gas. It's usually methane which is why people can light their farts.

The gases that make farts smell bad contain ammonia and hydrogen sulfide which are made in the intestine. And eating oily spicy food and drinking lots of soda makes you fart even more.
