Why does this happen? electric arc video?

TURN SOUND UP, http://www.youtube.com/watch?v=wslutqff8. , why doesn't it go straight across(i.e quickest path). is it using the particles in the air or something along those lines?

When the spark happens it ionises the air which makes it conduct, it also heats it so the warmer ionised air rises and the spark follows the path of least resistance up with it.
Electricity doesn't take the quickest path, it takes the EASIEST path, the path of least resistance, which may not be a straight line due to the temperature and water content of the air in that particular spot.
