Why whilst on holiday, travelin etc is an average of 20% tip accepted to make up waiters poor wages ?

Why dont they get decent wages in the first place, because the food aint cheap and the owners aint strugglin!

Its like saying, yes sure, i'll do this job for you at the goin rate, but I dont pay my staff well so you treat them once we've done!!

I agree with you, why should we pay for tip? The owners are the ones keeping the money for the food we consume. So on top of that we still have to pay for tip. That is not fair for us as consumers, nor for the waiters/waitresses, because they hardly make any money, and some people don't tip.
It's not just while travelling, if you're living in the city they will extort you. However I think customary it's 15%, at least that's what the locals pay, tourists often pay 20%, and the fancier the place and the better the service, generally the higher you have to pay in tips.

Go to fast food joints, no tipping necessary!

it's better to tip more evenly
because if you eat at a fancy place that charges more for the food that doesnt mean teh waiter worked twice as hard!

Part of your question infers that wait staff in your part of the UK- my best guess is UK- receives a decent wage and does not depend on tipping to enhance their income. It's all an average. Poor service equals no tip/small tip. Fantastic service (quality of service is in the eye of the receiver) can still get zero. My wife is a lousy tipper. She goes out of her way to find fault with the service to justify that. Other folk will give an average tip for poor service. Go figure.
I was a waiter for about 15 years and most of those years I worked at a private club that did not tip, but gave a wage over the minimum. It is my opinion that waiters are considered unskilled workers and so the philosophy is that they do not need to get paid as much. Of course this is not true but it is, in the US, the overall impression. We may know better, but tradition dies hard and tradition states that servants, including waiters, are unskilled, lower class, labor. For example, I notice that the majority of people I waited on acted as if I was their personal help for the time they sat at my table. Thus, I and my fellow workers got a great deal of abuse from customers on a regular basis including men grabbing my body, being yelled at when the kitchen made a mistake and so on, and so forth. If owners were forced to give a skilled wage to waiters, the impression might change over time. But as it is, waiters have no choice here but to try and kiss *** to get a decent wage. Finally, the government assumes that you make 15% at every table you work at and taxes that 15%. They do not take into consideration that some tables do not offer 15% tips and that a waiter must tip out of that 15% to the bussers, the dish washer and the chief. In the end that 15% ends up being a hell of a lot less then most people think. I always tip 20%. I am also happy to say that I am now out of the waiting business and am getting a Ph.D. where I look forward to being an underpaid teacher. LOL
i always tip as a rule people who earn less than me provided they give a good service
