What are the signs to watch for so you can tell if someone is lying or is guilty?

they wont' look you in the face, they may be fiddling with hair, or something else

If someone avoids eye contact by violently shaking or nodding their head while talking, take a pinch of salt with it..
A thief or a liar, will not make eye contact. They can pace or be very fidgety. They will want to leave and go somewhere or do something else. Make excuses, and stammer a lot. Continually change the subject. The signs are very obvious and you can tell, they are being false. Use your gut instinct.

they tend not to look you in the eye,and say things like ERM a lot.They are always looking for that extra lie.Test them out by asking more about their answer,the more they have to reveal(or make up)the more outrageous their story becomes.
A big clue is when the person repeats the question, this is a stall tactic to give them more time to make up and answer. Also, looking away - eye movement- before answering is another clue. A dull monotone answer without emotion is another clue.

Fiddling with everything. Elusive. no good news. Run away. If you think someone is lying, you are probably right. Trust your instinct (gut feeling).
I'd say nervousness and not looking at you. If you probe deeper you will find that what they say doesn't measure up to the truth. Good questions can ferret out a liar.
Apparently, if someone is unnaturally looking directly into your eyes can mean that he/she is lying. People tend to think that in order to be telling the truth you have be able to look someone in the eyes, so a liar could be deliberately trying to do this, maybe noticable by the fact the he/she is not blinking - at all! (Blinking is automatic, it does not come naturally not to!)

If a guy was lying to a gal, I'd figure that he'd probably take the sweet talking up a notch and start behaving like a character out of sweet valley high. If it's a friend, usually, the incredibly simple "trust me man" line works pretty well. Strangers are harder to 'read'.

Generally and contrary to what most people seem to be thinking, if someone is guilty or lying they find it hard to break from eye-contact possibly because have some covering up to do, they also need to take in all the info your facial expressions are giving off.do you believe them?, shall i maintain more eye-contact to throw them off scent and reassure them?. The next step for the guilty is calm, if someone calls you a lyer you don't like it right? But if you are guilty you come to accept it. Imagine your down the police station for an interview for something you didn't do, you'll be pacing the halls, the guilty one will be sat contemplating what they've done, or sleep.
If some-one starts a story with "What really happened" then it is a lie. Personally I don't lie, I simply do not tell the whole truth therefore I avoid any of the tell tale signs that afflict me. Worry not. if some-one you know is a liar they will catch themselves out soon enough.Although if you lie for long enough you start to forget which past was real and which you made up. It is a wierd situation, but once you believe your own lies you have cracked it and will never give it away
