Bobby Moore, a bit before my time, but the accolade this man get's of everyone is truly amazing.
I have seen footage of him, he was a great defender, always gave 100%, a great passer of the ball and a great understanding of the game.
Tony Adams, this was one amazing defender in my opinion, a great leader of men, a strong personality, a great centre half, great understanding of the game, a good passer of the ball, always had an yard over his opponent in the brain department, classy defender.
William Gallas, strong, quick, played with heart, verstile, could play right back, center back or even left back, scored goals, a proper man's defender, a legend even though he did go to Arsenal

As a Derby fan I saw McGrath a few time and although he was passed his best was still head and shoulders above the rest, a class act, so cannot disagree with some of the other posts on that one.
Stam was overrated, Adams good but not great... we could debate this for hours, good question!!
