How do I care for a leather motorbike jacket?

It actually depends on when the jacket was made, what type of specialty finish it has, and what it is used for.
A 'vintage' bike coat can be taken care of the same way as all leather, with saddle soap, or leather treatment.
The idea about lubing the zipper with candle wax is great.
A new jacket which has been treated with reflective coatings or other special treatments has to be taken care of following the manufacturers recommendations. These can all be found on the mfr's website.
For my modern leather coats (Joe Rocket, etc) daily cleaning, I always wipe the bug guts off with a damp cloth (water only - no soap) I don't scrub, but dampen the stubborn ones and let them sit for a minute before trying again.
At the end of the riding season I use a leather conditioner that also helps with waterproofing. I always hang the coat on a formed hanger (wider - designed for heavy coats and suits), and give it plenty of room to breathe in the closet.
Our vintage leathers get treated with saddle soap, hung on a formed hangar, and covered with a pillow case.
Don't store leather in plastic bags.

Use saddle soap , its natural oil that keeps the leather from drying out .

use nick wax.it softens and waterproofs it. Get it from any motorbike shop. Not sure of spelling though could be nip wax or nic wax.my hubby uses it on his bike leathers so never seen the tub.
Buy it flowers, take it out for meals and movies, and don't forget it's birthday.
SADDLESOAP
WASH THE JACKET ALL OVER WITH THE SOAP AND WIPE CLEAN WITH DAMP RAG AND DRY OFF NOT TOO WET JUST DAMP DONT USE ANYTHING ELSE IT WILL DAMAGE IT.
YOU CAN OBTAIN IT FROM A GOOD COBBLERS
