Way too many, man. They're always whacking each other's teeth out.

(This answer is for indoor hockey. Not ice hockey I don't know about that, not sure if it applies to outdoor hockey!)
field hockey= 11 players ,and upto 5 substitutes
ice hockey = 5players and goalkeeper
indoor hockey= 5 players and goalkeeper
55
Ours has 16 including two goalies

when i played in college we dressed 4 lines (12 players) and 3 sets of defense (6 players) and 2-3 goalies. which would make 20-21 dressed players on a bench. i think the max you can dress is 25.
This section of the forum gets a LOT of responses for both ice and field hockey, so it's a pretty good idea to indicate which you're asking about.
Looks like you have plenty of responses for both now though!
p.s. My name is Libby too! (although I play ICE hockey.. not field) ;o)

25 active players for NHL
usualy around 15-20 for youth ice hockey
Generally teams carry 22-23 players on their team. They might carry less because of the salary cap. Every game they're allowed to dress 18 skaters plus 2 goalies (4 forward lines and 3 defense pairings). A team is allowed to have a maximum of six people on the ice at a time. Usually it's 3 forwards, 2 D and the goalie, but if they're down a goal near the end of the game, they might choose to pull the goalie and play an extra attacker. If someone on the team is serving a penalty, they must play with one less player, sometimes two. If a team is caught with too many men on the ice, they serve a two-minte minor penalty. Some teams have lost the Cup because they had too many men on ice.
a max of 20 (i just learned coz i'm studying to become a ref!! wootwoot, how cool is that?!)
well, on a youth team anyway
There are no players in a hockey team, but on a team there is 20 plus the guys injured or sitting out.
11 (which includes the goalie because the goalie is a part of the team don't forget!)
20 plus 2 goalies usually, per shift on the ice in a game 5 plus goalie
