At the Athens 2004 Olympic Games, the number of women’s teams was increased from 8 to 10. The men’s tournament is set at 16 teams.

Supposedly all but 4 have to be under the age of 24. When they found out London had the 2012 games they did a team for Great Britain on Match of the Day and all but 4 players had to be under 23.
I think this age limit is overlooked if the participator is an amateur (as all athletes are as they are not contracted to a team).
