Answers:
You're allowed to catch fish & take them home when game fishing for Trout & Salmon... personally I recommend going to artificially stocked Trout reservoirs such as "Scaling Dam" (Cleveland / North Yorkshire Border, along A171), "Kielder Water" (Northumberland), Rutland Water (East Anglia) and similar such spots... since the fish there are stocked regularly (so you have a better chance of catching) + the fish were bred for that purpose... and prefer to use "Catch & Release" with wild game fish from rivers & streams, since stocks aren't as good as they should be these days.
When you do catch one, put the fish out of it's misery humanely using a device called a "priest" (which costs about £4.99). also ensure it's legal size.. it should be on the Environment Agency website in a PDF file on rules for your particular region... for instance, in the North-East region it's about 9" / 23cm.

It's an unwritten rule in British Coarse fishing that you release all fish caught, since a poke around messageboards such as http://www.maggotdrowning.com give the impression that us British Anglers are close to forming lynch mobs over immigrants from places like Poland who don't understand this rule about not killing fish (technically stealing, in the case of privately owned waters).

With sea fishing.. it's free to fish from the shore, but you aren't always guaranteed to catch anything.. I should know, I've been trying since about 1987, and all I've ever caught are crabs.
So, for Sea fishing your better off going on a trip on a Charter boat from somewhere like my home town of Whitby.. as the skipper in charge of the boat will know all the best spots, etc.

As you're new to fishing, I recommend you invest in a few books, such as:
JOHN BAILEY'S COMPLETE GUIDE TO FRESHWATER FISHING
http://astore.amazon.co.uk/wormdanglecou.

JOHN BAILEY'S COMPLETE GUIDE TO FLY FISHING
http://astore.amazon.co.uk/wormdanglecou.

The NEW Encylopedia of Fishing (ISBN 0-7513-3973-3)
http://astore.amazon.co.uk/wormdanglecou.
Ah! Fishing. It's not about the fishing you know. It's about The ebbing flow of life ,The dancing wheel of chance.
Most harbours have boats going out, just sit and sling your hook over the side, might catch something. Phone councils at Hull, Whitby or other fishing towns.
As jduck1979 said if you are after game fish its best to find a local stocked lake in your area.Just go to your nearest tackle shop they will point you in the right direction, and can set you up with the right gear. Sea fishing is the only other time you can take home your catch.Boat fishing is the best if you want to catch a good size fish, many skippers have gear you can use.Again visit your local tackle shop they are a mine of infomation.
I use this site for the sea fishing http://www.sea-fishing.org/
it has some good stuff.
